Paleo/Vegan Chocolate Chip Cookies

My friend gave me this recipe and it is seriously insanely good! I'm not kidding, we make these cookies 3 times a week! They are great for binge eating because they don't make your stomach feel sick after. Someone told me that because I wouldn't know as I don't binge eat cookies. Haha that's a lie! 



  • 2 cups blanched almond flour

  • 2 tablespoons coconut flour

  • 1/2 teaspoon Celtic sea salt

  • 1/2 teaspoon baking soda

  • 1 tablespoon vanilla extract

  • 1/2 cup ghee or coconut oil (or butter), melted (I use coconut oil as ghee made it too salty tasting)

  • 1/2 cup coconut nectar OR maple syrup (coconut nectar adds a caramel taste)

  • 3/4 cup dark chocolate chips** (just get dairy free, soy free semi sweet or dark chocolate)


  1. Preheat oven to 350 degrees F.

  2. Combine dry ingredients in a large bowl.

  3. Combine wet ingredients in a small bowl.

  4. Mix wet ingredients into dry ingredients.

  5. Use a small cookie dough scoop* or form into 1 inch balls and place on a parchment paper lined cookie sheet. (used a Silpat.)

Press dough down onto pan to form round disks. (The dough does not automatically melt and spread out as with regular flour.)



Bake 8 minutes. 

Makes 24 cookies.


Double or Triple the batch if you dare! I have frozen the dough, defrosted in microwave and then cooked them. Still great!
